Having the Meat Thief at our event really made it. Just had the most amazing BBQ food in November for my birthday and on my what a taste explosion it was. The brisket was so moist and tender, the smokey Mac'n'cheese topped with pigs in blankets, i could eat that everyday, the BBQ beans, potatoes and coleslaw.

Transfer chicken wings to a roasting tray. Cook for about 30 mins until the wings are just cooked. Put the wings in a bowl and rub all over with the marinade. Place all the chicken wings on a large non-stick roasting tray – well spaced out. (See Note 2.) Place the tray in your preheated oven.

The peri peri marinade is so so simple, with only a handful of ingredients added to a blender. Lemon - This helps to loosen up the marinade, and add some freshness too, but the acidity also tenderises the chicken. We used just lemon juice, but you could add some zest for extra lemon flavour. We used 2 lemons, but if yours are really juicy then you might only need one. You can also use limes instead if you prefer. To get more juice out of your lemons, then roll them with the palm of your hand first.

Next, over medium heat set an iron skillet grill. Brush olive oil and arrange the chicken pieces shaking off the excess marinade without over crowding. Cook them roatating side to side after few minutes until fully cooked. It should take you about 30 mins approximately. Brush them with olive oil or drizzle oil on the skillet while cooking the chicken. Blend the red chillies , half of the olive oil, oregano, paprika, lemon juice and onion salt in a food processor/blender to form the peri peri sauce.
You have to pan sear or pan roast the peri peri sauce slathered chicken pieces on a skillet grill until the meat is well cooked. Rub the chickens with some salt and then pour about half the sauce over them. Marinate in the fridge overnight, or for at least 3 hours. Preheat the oven oven to 200 degrees C then bake the chickens for half an hour. Turn the heat down to 180 degrees C and cook for another 15 minutes or until completely cooked through. You can use this marinade on chicken breasts, quarters or wings if you like.

Peri Peri is actually a type of chilli, and it's also known as the African bird's eye chilli. Some people call it Piri Piri, but Peri Peri is what we are more used to in the UK. Using a large mixing bowl, coat the chicken wings in the peri peri sauce, using tongs to evenly distribute. Cover the bowl with cling film and pop in the fridge to marinade for a minimum of 1 hour/or if you have time for up to 24 hours. Piri Piri Chicken tastes amazing.
